Green Goddess Butter Strip Steak

Fresh herbs and lemon juice smothered on a NY Strip create a balance of bright, fresh, rich flavors. Green Goddess Butter Strip Steak – because steaks aren’t just for the guys.

Ingredients

Green Goddess Butter

2 sticks butter, softened

1/4 cup sour cream

1/4 cup fresh Italian flat leaf parsley, finely chopped

2 tablespoons fresh tarragon, finely chopped

3 tablespoons fresh chives, finely chopped

2 cloves garlic, minced

1 tablespoon fresh squeezed lemon juice

1 teaspoon anchovy paste

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Steaks

4 USDA Choice New York strip steaks

2 teaspoons kosher salt

1 teaspoon garlic powder

1 teaspoon course ground black pepper

Directions

For Green Goddess Butter

1Place the compound butter ingredients in a medium bowl. Blend using a hand mixer until thoroughly mixed. Spoon the butter onto a sheet of plastic wrap. Roll into a two-inch-thick log about eight inches long, and wrap tight. Refrigerate for at least 30 minutes.

2When you put the steaks on the grill, unwrap the butter and slice a 1-inch slice of butter for each steak.

For Steak

1Combine the salt, garlic powder and pepper. Rub onto both sides of the steaks.

2Heat grill to high

3Grill for 5 minutes. Turn one-quarter turn to create diamond grill marks. Grill 2 more minutes.

4Flip. Grill 5 minutes.

5Place a slice of butter on each steak. Close the grill lid and cook for 1-2 more minutes.

6Using your tongs, gently spread the butter around to coat the steak.

7Remove from the grill and let rest for 5-10 minutes before serving.

TIPS

There is enough butter for 8 steaks. You can freeze the remaining butter for later, or use it on other meats or vegetables.
