Grilled Banana Bread

You can cook almost anything on a grill – even grilled banana bread.

  • Yields: 8 servings


1 stick (115 grams) butter, softened

½ cup (145 grams) white sugar

½ cup (45 grams) brown sugar

2 eggs

2 very ripe bananas

1 tsp. (15 grams) vanilla

2 cups (270 grams) flour

1 tsp. (5 grams) baking powder

1 tsp. (5 grams) baking soda

½ tsp. (3 grams) salt

½ tsp. (2 grams) cinnamon

¼ tsp. (2 grams) grated nutmeg

½ cup (50 grams) chopped walnuts


1With a stand or hand mixer, beat together the butter and sugars in a large bowl until creamy. Add in the eggs, bananas and vanilla and mix until smooth.

2In another bowl, blend the dry ingredients. Pour into the banana mixture and mix, until combined.

3Liberally butter two Mini Lodge cast iron skillets. Divide the batter evenly into each skillet.

4Heat half the grill to 375 degrees. Place the skillets over indirect heat (the side with the burners off). Bake for 60 minutes. Rotate. Continue baking for 30 minutes or until a toothpick inserted in the center comes out clean.

5Remove to the counter and allow to cool slightly before slicing. Serve with butter.

If using a Big Green Egg, use the plate setter for indirect heat.
The batter may rise over the sides. That’s okay. It adds character. It will burn off.
