Prep: 20 mins Cook: 1 hr 20 mins Yields: 6 servings Ingredients Vegetables 4-6 peppers 1 sweet yellow onion, peeled and halved Steak and Marinade 1 ½ lbs. flank steak 1/3 cup olive oil ¼ cup white wine vinegar 6 cloves garlic 1 tsp. salt ½ tsp. ground cumin ½ tsp. ancho pepper powder ½ tsp. adobo seasoning ½ tsp. black pepper Fajita Sauce 2 tablespoons olive oil 1 tablespoon white wine vinegar 1 tsp. granulated sugar ½ tsp. salt ¼ tsp. cumin Finishing Touches Corn or flour tortillas Shredded cheese Lime wedges Chopped cilantro Hot sauce Directions 1Heat the Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer for 5-10 minutes. 2Place the peppers and onions in the fryer basket and cook for 40 minutes. 3While the peppers are roasting, combine the marinade ingredients and flank steak in a large sealable plastic bag. Let rest on the counter. 4Combine the fajita sauce ingredients in a large bowl. 5Remove the vegetables from the fryer basket. Place flank steak in the fryer basket in a single layer. Cook for 40 minutes. 6While the steak is cooking, remove the seeds and stems from the peppers. Slice with the onions. Add to the bowl of fajita sauce. 7Remove the steak from the fryer basket. Let rest 10 minutes. Slice across the grain and toss with seasoned vegetables. 8Serve with tortillas, shredded cheese, lime wedges, fresh cilantro and hot sauce.You can use traditional bell peppers, but if you like more flavor try using a mix of poblano, Anaheim and jalapeno peppers.
