Grilled Savory Maple Purple Sweet Potatoes

Be a rebel. Pass up orange sweet potatoes and use Okinawa purple sweet potatoes. These are grilled and topped with a savory maple pecan drizzle.

Ingredients

Savory Maple Dressing

2 tablespoons shallots, minced

1 clove garlic, minced

1 tablespoon fresh sage, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh mint, chopped

2 tablespoons maple syrup

1 tablespoon apple cider vinegar

1/3 cup toasted pecans, chopped

1/4 teaspoon salt

pinch of cayenne (optional)

Grilled Sweet Potatoes

1 pound Okinawa purple sweet potatoes

3 tablespoons olive oil

Kosher salt

Fresh cracked black pepper

Directions

1Combine the savory maple dressing ingredients in a small bowl. Set aside.

2Pierce the potatoes with a fork. Microwave for 4 minutes.

3Heat the grill to medium-high. Cut potatoes into wedges. Brush with olive oil on all sides. Season with salt and pepper.

4Grill on all sides, until charred with grill marks.

5Assemble on a platter. Just before serving, pour the savory maple dressing on top.
