Vegetarian Thanksgiving using a Turkey Fryer

Thanksgiving and turkey fryers aren’t just for meat lovers. Enjoy a vegetarian Thanksgiving using an oil-less turkey fryer. The presentation of carving a tender butternut squash and Brussels sprouts straight from the stalk will make this a memorable veggie meal.

Ingredients

Turkey Fryer Butternut Squash

1 butternut squash

kosher salt

Turkey Fryer Brussels Sprouts

1 stalk Brussels sprouts

5 tablespoons butter

juice and zest half a lemon

2 cloves garlic, minced

½ tsp. salt

pinch of red pepper flakes

pinch of nutmeg

Directions

Turkey Fryer Butternut Squash

1Preheat the Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer for 5-10 minutes.

2Place the squash in the basket stem-side up. Cook for one hour.

3Remove from basket. When cool to the touch, cut in half and remove the seeds and skin.

4Slice or dice and sprinkle with salt.

Turkey Fryer Brussels Sprouts

1Cut the stalk in half and lay on a rimmed sheet pan.

2Melt the butter and remaining ingredients in a saucepot. Brush all over the sprouts on all sides.

3Place the sprouts in the fryer basket and lower it into the fryer. (save the sheet pan with butter drippings) Cook for 30 minutes; then rotate each stalk 180 degrees.

4Continue cooking for another 30 minutes.

5Remove the basket and set it on the sheet pan. When cool enough to handle, slice the sprouts off of the stalk and return to the sheet pan and roll in the leftover butter drippings.

You can cook both of these recipes in the fryer at the same time.
