One pot meals sometimes get a bad rap. You know…the ones where everything is mixed together and turns out all one-note.

Well the Lodge Cast Iron Cook-It-All is changing one pot meals into meals we can all enjoy.

Their new 2-piece cooker comes with a grill/griddle and a wok/oven. It allows you to grill and roast your dinner.

And I should mention, you can do it all over a campfire. My favorite place to cook.

Season the chicken and potatoes

To make cast iron grilled chicken, start with a flavorful seasoning. I combined salt, paprika, herbes de provence, pepper, garlic and olive oil.

If you prefer to buy a store bought blend, just mix a tablespoon of seasoning with 3 cloves fresh minced garlic and 3 tablespoons olive oil.

Rub it all over the chicken, while you get your campfire going.

Now’s a good time to season the potatoes, too.

I love the small rainbow potatoes. They add such a pretty color and variety. Plus, the purple potatoes have added antioxidants. Bonus!

Check your campfire temp

Before setting the Lodge Cast Iron Cook-It-All griddle on the coals, make sure they’re not too hot.

If they’re so hot that you can’t hold your hand over them, you’re going to burn your meat. I speak from experience. These guys got a little too crispy.

Instead, create a small layer of coals and make sure you can comfortably hold your hand over them for 6-8 seconds.

Then, place the chicken on the grill skin side down, along with the seasoned potatoes.

Grill for around 5 minutes, and flip.

Now, thanks to the handy Cook-It-All lid, you can turn the pan into a roasting oven.

Simply place the lid (the upside-down skillet) over the grill, and add some coals to the top, for even heat.

While the chicken cooks, their drippings will steam inside the Cook-It-All, keeping the chicken extra juicy and adding flavor to the potatoes.

Continue cooking for 15-20  minutes, until the internal temperature of the meat reaches 165F.

When you remove the lid, the chicken will be juicy. The potatoes will be tender, and your one-pot campfire meal will be ready to make some campers extra happy.

Cast Iron Grilled Chicken with Rainbow Potatoes

With the Lodge Cast Iron Cook-It-All, you can grill and roast chicken over a campfire, creating crispy skin with juicy meat and a side of flavor-infused rainbow potatoes.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Servings: 4

Ingredients 

Grilled Chicken

  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 1/2 tsp kosher salt
  • 1 tsp smoked paprika
  • 1 tsp herbes de provence
  • 1 tsp black pepper
  • 6 pieces chicken

Garlic Potatoes

  • 1 lb small rainbow potatoes
  • 2 tsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp kosher salt

Instructions 

  • Combine all of the chicken rub ingredients.
  • Trim excess fat from the chicken. Coat liberally with the rub.
  • Toss the potatoes in olive oil, minced garlic and salt.
  • Place the Lodge Cast Iron Cook-it-All grill pan over medium heat.
  • Place the chicken on the grill plate skin side down. Add the potatoes. Grill for 4-6 minutes.
  • Flip. Cover with the lid. Cook for 15-20 minutes, until the internal temperature of the chicken reaches 165F. 
  • Remove from heat and serve.
