This recipe is really easy to make because it can all be combined in a mini food processor or blender. Just give the veggies a quick chop on the cutting board, and then toss them in the chopper and pulse to your desired consistency.

Paleo Avocado Salsa

Skip the mayo or gravy, this creamy, paleo Avocado Salsa is purely veggies, so it’s healthy to add an extra dollop to your burgers or pork chops.

Servings: 2

Ingredients 

  • 6 tomatillos
  • 1/2 red onion
  • 4 cloves garlic
  • 1-2 Serrano peppers
  • 1/4 cup cilantro
  • juice of one lime
  • 2 avocados
  • 1 tsp salt

Instructions 

  • Remove the skins from the tomatillos and quarter. Cut the onion and pepper into large chunks.
  • Place the tomatillos, onion, garlic, peppers, cilantro and lime juice in a food processor. Pulse until smooth.
  • Add the avocado and salt and pulse, until it reaches your desired consistency.
  • Transfer to a bowl. Cover and refrigerate for at least one hour to allow the flavors to blend.
