Try grilled potatoes for a healthier way to enjoy French fries. They’re tender inside with a crunchy exterior.

This recipe works with any type of potato, including sweet potatoes, fingerling potatoes and russet potatoes.

I like to leave the skins on for added nutrients and color, but you can peel them before microwaving, if you prefer.

Ingredients

  • Potatoes
  • Olive oil
  • Kosher salt
  • Black pepper

Instructions

  1. Heat the grill to medium-high (375-400F degrees).
  2. Cut into wedges.
  3. Cover with a damp paper towel and microwave 3-5 minutes, until fork tender.
  4. Season with olive oil, salt and pepper.
  5. Grill 15-20 minutes, turning occasionally.
