
This recipe works with any type of potato, including sweet potatoes, fingerling potatoes and russet potatoes.
I like to leave the skins on for added nutrients and color, but you can peel them before microwaving, if you prefer.

Grilled Potatoes
Ingredients
- Potatoes
- Olive oil
- Kosher salt
- Black pepper
Instructions
- Heat the grill to medium-high (375-400F degrees).
- Cut into wedges.
- Cover with a damp paper towel and microwave 3-5 minutes, until fork tender.
- Season with olive oil, salt and pepper.
- Grill 15-20 minutes, turning occasionally.
