 1 stalk Brussels sprouts
 2 tablespoons olive oil
 kosher salt
 black pepper
 10 cloves garlic
 1 lemon
 6 strips bacon
 2 tablespoons melted butter

1

Heat the smoker or grill to 375 degrees with indirect heat.

2

Drizzle the olive oil, salt and pepper over the entire stalk of sprouts.

3

Peel the garlic and slice each clove. Tuck the cloves into the sprouts.

4

Cut the lemon in half. Save one half for later. Slice the other half into small slices and tuck into the sprouts.

5

Slice the bacon in half vertically. Weave the strips of bacon around the cloves throughout the stalk.

6

Place the stalk on the grill and cook for 45 minutes to an hour, until the sprouts are soft.

7

Combine the juice from the remaining half of lemon with the melted butter. Drizzle over the entire stalk.

TIPS

It makes a pretty presentation to serve the entire stalk at the table. You can carve the sprouts off tableside.

If you prefer to serve the sprouts in a bowl, carve them off with a knife. Add the bacon and roasted garlic to the bowl. Discard the lemons. Add melted lemon butter, and toss.

You can also roast this in a 375-degree oven for 45 minutes to an hour. Keep an eye on it toward the end, so you don't burn the bacon.
