Korean Short Ribs (Galbi)

I grill Korean short ribs every other week. They’re quick and taste like beef bacon candy. Recipe + three grilling methods, including two for the campfire.

Korean Short Ribs

 1/4 cup soy sauce
 1/2 cup dark brown sugar
 1/2 cup pear puree
 1/4 cup minced white onion
 1/4 cup water
 2 cloves garlic, minced
 2 tablespoons rice wine vinegar
 1/2 teaspoon kosher salt
 1/2 teaspoon black pepper
 1/2 teaspoon chili pepper flakes
 1/4 teaspoon ginger powder
 1/2 teaspoon sesame oil
 2 pounds Korean or flanken short ribs

In a large zip-top bag, mix together everything except the ribs. Add the ribs and marinate overnight.

Grilling Method

Heat your grill to high. Cook 5-7 minutes over direct heat, turning occasionally.

Campfire Method

Build your campfire with hardwood or charcoal. Weave the beef onto long metal skewers. Hold over the fire, turning occasionally for 5-7 minutes.

Or, to cook without skewers, place a grill grate over a campfire. Cook over direct heat for 5-7 minutes, turning occasionally.
