Oil-Less Fried Pork Belly

This has to be the easiest way to make tender, crispy pork belly. It's fried without oil in an oil-less turkey fryer for one hour.

Oil-Less Fried Pork Belly from Girls Can Grill

 3 ½-lb. pork belly
 salt
 pepper
 smoked paprika
Glaze
 ½ cup water
 ½ cup brown sugar
 ¼ cup soy sauce
 2 tablespoons red wine vinegar
 1 clove garlic, minced
 1 tsp. Tabasco
 ½ tsp. salt

Using a sharp knife, score* diamonds into the fat cap. Season the pork belly on both sides with salt, pepper and smoked paprika.

Turn the Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer on and heat for 5-10 to minutes.

Place the pork belly in the basket, fat side up. Cook for 1 hour or until the internal temperature reaches 150-160F degrees. While the meat is cooking, make the glaze.

Remove the basket from the fryer and allow the meat to rest for 10 minutes.

Place all of the ingredients in a saucepot. Bring to a boil over medium heat and cook for 10 minutes. Remove from heat until ready to use.

Poke the meat with a knife and pour half of the glaze on top. Slice and serve with the remaining glaze.

Cut the pork belly into chunks. Heat in two batches in a large skillet over medium-high heat, until crispy. Add both batches to the pan and add the glaze. Cook until caramelized. Serve with white sticky rice.

*Scoring is different than slicing. Slicing means cutting all of the way through the meat. Scoring means cutting through the fat until you reach the meat and then stopping, so the pork belly stays in tact.
