Smoked Turkey Kentucky Hot Brown Sliders

The Kentucky Hot Brown is usually served in a casserole dish piping hot from the oven. These sliders make the Derby Day classic party food friendly.

Ingredients

  • 1 3-lb boneless, skinless turkey breast
  • sea salt
  • black pepper

Mornay Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 pint (2 cups) heavy cream
  • 1/2 cup shredded Italian cheese blend
  • pinch nutmeg
  • salt and white pepper to taste

Toppings

  • 8 cherry tomatoes sliced
  • 8 slices cooked bacon

Instructions

Smoked Turkey Breast

  1. Heat smoker to 250F degrees. Rub turkey breasts with salt and pepper. Smoke to an internal temperature of 165F degrees, about 2 hours. Let it rest while you make the cheese sauce.

Mornay Sauce

  1. Add the butter and flour to a saucepot. Cook over medium heat for 2 minutes, stirring often.

  2. Stir in the cream, and cook for 90 seconds. Add the cheese. Stir until melted. Add the nutmeg and season with salt and white pepper to taste.

Assembly

  1. Set the oven to broil.

  2. Remove the crust from the Texas toast. Cut each slice into 4 squares. Place on a rack in a sheet pan. Toast in the oven for 45 seconds.

  3. Thinly slice the smoked turkey. Add a slice onto the toast squares. Top each with a spoonful of mornay sauce. (You'll have extra cheese left.)

  4. Return the pan to the broiler until the cheese begins to brown, about 5 minutes.

  5. Break each slice of bacon into thirds. Add onto the slider with a tomato and optional jalapeno slice.
