Make a batch of smoked simple syrup and steep in a mason jar with mint leaves.
Combine the simple syrup, lime juice, rum and ice in a cocktail shaker. Shake for 15-20 seconds.
Fill a glass with ice. Strain the mojito from the shaker into the glass. Garnish with a mint sprig and lime wedge.
