How to Make Beef Tallow

One of the best ways to use brisket fat trimmings is to make homemade pure beef tallow. It can be used to add flavor to so many recipes.

Ingredients

  • 2 lbs beef brisket fat

Instructions

  • Prep: When trimming a brisket, separate the fat pieces. Cut those into 1-2-inch cubes.
  • Render: Place the cubes in a large pot on the stove over medium-low heat. Render for 3 hours, stirring every 20-30 minutes.
  • Strain: Remove the crispy bits of meat from the pot with a slotted spoon. Place a strainer over a pitcher. Carefully, pour the rendered beef fat through the strainer into the pitcher.
  • Jar: Pour the strained beef tallow into jars. Allow to cool. Cover and refrigerate.

Notes

Every pound of beef fat yields about 1 cup of beef tallow. This recipe yields 2 cups of tallow. A serving size is 1 tablespoon.
If you start with less brisket fat, it will take less than 3 hours to render. If you have more brisket, use a larger pot and allow another 1-2 hours or render the fat in two pots.
