Grilled Zucchini
Grilled zucchini is one of my favorite side dishes. The squash holds up so well to the grill and can be served hot or cold.

- 2 zucchini squashes
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1 tsp coarse ground black pepper
Heat the grill to medium-high (375-400F degrees).
Cut zucchini into spears or 1/4-inch thick slices.
Drizzle the slices with olive oil and season all over with salt and pepper.
Grill cut side down for 7 minutes, until you get nice grill marks.
Flip and grill for about 8 more minutes.
I love zucchini with salt and pepper, but you can also add your favorite seasonings. Garlic powder, onion powder and lemon zest are nice touches.
If your slices are thinner, they will cook in less time.
If your slices are thicker, they will need a little more time.
The main thing to look for is nice grill marks. You also want the zucchini to still be a little firm inside.
