Grilled Lamb Chops

If you’re new to lamb, I recommend trying grilled lamb chops cut from a rib roast. The meat is tender and flavorful like ribeye with a bright, sweet finish.

  • 1 rack of lamb
  • 2 tbsp shallots chopped
  • 3 cloves garlic minced
  • 2 tbsp fresh thyme chopped
  • 2 tbsp olive oil
  • juice of 1 lemon
  • 1 tbsp white wine vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp sugar


  1. Slice the rack of lamb into chops.
  2. Combine the remaining ingredients and spread onto both sides of the lamb chops. Let marinate for 30 minutes while the grill heats. 

  3. Heat the grill to high. Place the chops on the grill and cook about 5 minutes per side or until the internal temperature reaches 145F degrees. Let the meat rest about 5 minutes before serving.
