Rub both sides of the pork chops with olive oil and soy sauce. Sprinkle liberally with garlic and herb seasoning.
Heat the grill to 400-450 F degrees.
Place the chops on the grill. Grill for 7 minutes. Flip and grill for another 5-7 minutes to desired wellness (USDA recommends 145 F degrees).
Remove to a plate or pan. Cover with foil and let rest for 3 minutes.
You can use any type of barbecue seasoning to change the flavor profile.
