Grilled spiral-cut honey glazed carrots

- 6 large carrots
- 1 tsp olive oil
- pinch kosher salt
- 1 tbsp hot honey
- pinch gochugaru optional
Peel: Wash and peel the carrots, removing the ends.
First Cut: Place one carrot between two chopsticks. Cut at a 45-degree angle every 1/8 of an inch. The knife should stop at the chopsticks so it doesn't go all the way through.
Second Cut: Flip the carrot over. Now, cut the carrot in slices straight across every 1/8 of an inch without going all the way through.
Season: Place the carrots on a pan. Drizzle with olive oil and a pinch of kosher salt.
Grill: Grill over high direct heat for 10-12 minutes, flipping often.
Glaze: Drizzle the carrots with hot honey and cook for another 3 minutes.
Serve: Remove the carrots to a platter. Drizzle with more honey and garnish with a pinch of salt. If you like extra heat, add a pinch of Korean chile flakes.
Instead of hot honey, you can also use regular honey, maple syrup or melted butter.
Gochugaru is a sun-dried Korean chile flake. It's mild, sweet and earthy.
