Homemade Pickling Spice

- 2 tbsp whole allspice
- 2 tbsp cardamom pods
- 2 tbsp whole cloves
- 2 tbsp coriander seeds
- 1 tbsp red pepper flakes*
- 2 tsp cinnamon sticks broken
- 3 bay leaves crumbled
- 1 tsp orange zest
Makes 1 cup of pickling spice (16 tablespoons)
My recipe for bread and butter pickles uses 2 tablespoons of pickling spice for 6 pickling cucumbers.
My recipe for pastrami brine uses 1/4 cup of pickling spice per gallon of water.
*Adjust the amount of crushed red pepper flakes to your preferred heat level.
You can either use fresh orange zest or purchase orange peel in the spice aisle.
