Smoked Spicy Mustard Brown Sugar Bacon
Brown sugar bacon gets even better when you add spicy mustard hot sauce to the glaze. The smoky treat melts in your mouth.

Heat Grill: Heat your smoker to 300F degrees with indirect heat.
Make Glaze: Combine the brown sugar and hot sauce in a bowl. Microwave for 30 seconds to thin in out. Stir well.
Brush: Place the bacon on a baking rack in a single layer. Brush the spicy honey mustard brown sugar on both sides of the bacon.
Smoke: Place the rack in the smoker, and smoke for 30-40 minutes, depending on the thickness of the bacon. The bacon will still be pliable, but will harden as it cools.
Cool: Remove from the grill and let it cool on the rack over a baking sheet.
If you can't find the spicy mustard hot sauce, you can use 1 1/2 tablespoons spicy mustard, 2 teaspoons of maple syrup and a couple dashes of hot sauce or a pinch of cayenne pepper.
Do not cool the bacon on paper towels or they will stick.
