Try these juicy pork tacos for a change this taco Tuesday. Easy to prepare and packed with smoky chipotle flavor.
Pork doesn’t get enough action in the taco game. Occasionally, you’ll see a carnitas, pork belly or tacos al pastor on the menu, but these varieties take a while to prepare.
For a quick pork filling, use pork steaks. Unlike pork chops, pork steaks are cut from the pork shoulder. Usually the shoulder needs to cook slow and low, but when it’s sliced thin like a steak, it grills up fast.
And because it’s a fattier piece of meat, it will be nice a juicy. I like to think of it as the ribeye of the pig.
This recipe includes a quick chipotle rub made with chipotle chile pepper and other standard spices. I like to rub one side of the meat and let it sweat for about 15 minutes before flipping it and rubbing the other side.
For more intense flavor, you can let the rub rest on the meat even longer in the refrigerator.
After about 15 minutes on the grill, let the meat rest for at least 10 minutes before slicing. Pull together all of your toppings, and layer them on flour tortillas or corn tortillas.
I usually make my flour tortillas with beef tallow, but for these tacos, you might want to make them with lard.
Some of my favorites include salsa verde, guacamole, purple cabbage, white onions, cilantro and sour cream. And a squeeze of fresh lime juice makes every taco better.
Serve them alongside a smoked margarita or smoked mojito.
Store leftover grilled pork in an airtight container in the fridge for 4-5 days.

Grilled Pork Steak Tacos with Chipotle Rub
Ingredients
- 1 tsp kosher salt
- 1 tsp ground cumin
- 1 tsp chipotle chile pepper powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp sugar
- 2 pork steaks
Instructions
- Heat Grill: Heat the grill to medium-high heat.
- Season: Combine all of the seasonings in a small bowl. Rub onto one side of the pork steaks and let rest 15 minutes. Flip. Rub the other side and let rest for 15 minutes.
- Grill: Place the marinated steaks on the grill and cook for 15 minutes, flipping once. Let rest for 10 minutes. Slice.
- Rest: Let the steaks rest for 10 minutes before slicing.
- Serve: Layer sliced pork onto tortillas and your favorite taco toppings, such as guacamole, onions, cabbage and hot sauce.
