Grilled yellow squash is one of my favorite side dishes. The squash holds up so well to the grill and can be served hot or cold.

Ingredients

  • Yellow squash
  • Olive oil
  • Kosher salt
  • Black pepper

Instructions

  1. Heat the grill to medium-high (375-400F degrees).
  2. Cut the squash in half lengthwise.
  3. Season with olive oil, salt and pepper.
  4. Grill cut side down 7 minutes.
  5. Flip grill 8 minutes.
