What is an Evo Grill?

Although many people refer to the Evo as a grill, it’s actually a griddle…and a really cool griddle at that.

It’s ideal for cooking up burgers; fajitas or quesadillas; bacon, pancakes and eggs; and fried rice.

What makes it unique compared to other flattops is its circular design. It’s a showpiece that’s great for entertaining.

Made in the USA, the Evo Grill is available as a built-in, a free-standing wheeled cart or a professional tabletop.

  • The built-in can be installed into your custom outdoor kitchen and comes with either a 25-inch or 30-inch diameter cooking surface.
  • The wheeled cart has a 30-inch cooking surface and can be easily stored and wheeled out when you’re ready to cook on it.
  • The professional tabletop is also 30 inches in diameter and can be placed on any solid table or counter.

All models are fueled by either propane or natural gas. Delivery includes a cook surface cleaning kit (handle, pad and screen), two stainless steel spatulas, one stainless steel cook surface scraper and an Evo cookbook.


Evo Grill Features

Dual Burners

Beneath the Evo’s black oil-seasoned steel cooking surface, you’ll find two burners that provide 48,000 BTUs.

Having an inner and outer burner allows you to setup two cooking zones.

Dials and Ignition

There are two dials on the front of the grill to independently control each burner. The temperature ranges from 225-550F degrees.

To the left of the dials, you’ll see the battery operated ignitor. You simply turn on your fuel source, turn at least one dial to release gas or propane and press the ignitor. It should light instantly.

Propane Tank Storage

If you choose the propane model like I have, there is a stainless steel sleeve that covers the propane tank. This gives the grill a sleek look.

To insert the tank, you’ll need to remove one of the bars on the side. It simply slides up. Then, you add the tank, slide on the cover and replace the bar.

Grease Collecting

The grease collection system is one of the the features that sets the Evo apart from other griddles.

With rectangular griddles, grease will pool up and get blocked by the side walls, which leaves excess fat in your foods.

With the Evo, the grease will drip off the sides right into the circular drip pan, allowing you to enjoy healthier meals.

Another bonus of this design is that sometimes when you cook on a griddle, food will splatter, which can stain your patio, deck or concrete. This circular drip pan helps prevent that because it surrounds the entire surface.

Hood

The Evo grill comes with a huge stainless steel hood with an adjustable vent, which is awesome if you want to use the griddle to smoke, roast or steam foods or just to keep food warm.

It also helps protect the griddle surface when you’re not cooking on it. When you don’t need to use the hood, simply hang it on the side.

Mobility

The main advantage of the Evo wheeled cart is that it’s mobile. It has large sturdy wheels that roll easily on just about any backyard surface.

How to cook on an Evo Grill

Cooking on the Evo griddle is easy. Start by turning on your grill and heating it up to your desired temperature.

I recommend experimenting with a few inexpensive foods so you can get comfortable with the heat controls and two-zone cooking.

Personally, I like to cook foods on the outer burner.

I often use the center burner to hold foods and keep them warm. And sometimes, I don’t even need to turn the center burner on because the griddle surface holds residual heat well.

The griddle has a non-stick surface, so if you keep it cleaned and seasoned properly, you won’t need to use much oil or fat when you cook.

While the Evo sears burgers, steaks and scallops beautifully, you can also roast, steam and even smoke on it.

Use the optional stainless steel roasting racks to elevate the food above the griddle to cook it more slowly. Add a wood chip foil pouch to the griddle for added smoke.

And use the optional stainless steel cooking covers to steam. Simply squirt a little water around your food, add the cover and let the heat do the rest.


How to clean an Evo Grill

The Evo is an investment, so I highly recommend you take good care of it by cleaning it after each use.

  1. While the Evo is still warm, use the included scraper to scrape any food residue off the edge into the drip pan.
  2. Squirt a little oil on the surface and use the included grill screen to scrub away any food the scraper missed. Make sure the oil is a high smoke point oil.
  3. Wipe the surface with a cloth towel or paper towel.
  4. Apply another thin layer of oil and use the polishing pad to reseason the griddle.
  5. Use a paper towel to clean the drip pan, pushing any residue toward the grease collector.
  6. Remove the grease pan; discard of the grease and wash with soap and water.

Every now and then, you’ll also want to wipe down the stainless steel hood and other surfaces. Keep the Evo protected with the optional heavy-duty vinyl cover.
