What are steak bites

Steak bites are perfectly cooked nuggets of beef that are tossed in a garlic butter sauce with fresh herbs.

This recipe is a great way to take 1-2 steaks and spread them out to serve several people. It’s a real cost savings and they’re absolutely delicious.

While some recipes call for cutting the steak and then cooking it, I prefer to sear the steak first and then cube it and sauce it. This allows the edges of the steak to form a beautiful crust packed with flavor.

Ingredients

  • Ribeye or Sirloin Steak: Both cuts of steak will work for this recipe. Ribeye is a little more forgiving and tender because it has more marbling. If you choose sirloin, look for top sirloin.
  • Kosher Salt
  • Black Pepper: I prefer coarse-ground black pepper because it gives great texture.
  • Vegetable Oil: Any type of oil with a high smoke point will work, such as canola oil, corn oil or avocado oil.
  • Salted Butter: For the most flavorful results use real butter. I almost always use Kerrygold.
  • Minced Garlic: I prefer using fresh garlic cloves. I use this garlic press. It’s been my favorite for years.
  • Worcestershire Sauce: This adds the perfect amount of umami.
  • Fresh Thyme
  • Red Pepper Flakes
Substitutions: If you want to make these more saucy, you could add a dash or two of A1 steak sauce or Heinz 57 sauce. In addition to thyme, you can use other fresh herbs like rosemary or oregano.

How to sear garlic butter steak bites

Griddles tend to run a little hotter than skillets. So if you’re using a griddle, set it to medium heat. If you’re using a large cast iron skillet, heat it to medium-high heat.

  1. STEP ONE: Season the ribeye on both sides with kosher salt and black pepper.

  1. STEP TWO: Add a little oil to the hot griddle or pan. Then, add the seasoned steak. Press it down, so the surface makes full contact. This will create a nice crust. Cook for 4-5 minutes.

PRO TIP: It's best to use steaks that are one to 1 1/4 inches thick. If you use thinner steak, reduce the cooking time. 
  1. STEP THREE: Flip the steak over and continue cooking it for another 4-5 minutes, until the internal temperature reaches about 115F degrees.

  1. STEP FOUR: Remove the steak from the griddle and let it rest for about five minutes. Then, slice it into 1-inch cubes. Remove any obvious fat or gristle.

  1. STEP FIVE: Return the steak cubes to the griddle. Add the butter, garlic, Worcestershire sauce, thyme and red pepper flakes. Toss with a spatula and cook to your desired doneness.

How to serve garlic butter steak bites

These juicy steak bites make great appetizers. You can serve them as party food or at a tailgate. Just pile them in a bowl or on a platter, garnish with more thyme or fresh parsley and serve with toothpicks.

They’re also great as a high-protein snack. Or serve them as a lovely dinner with mashed potatoes or Grilled Mini Hasselback Potatoes and a side of veggies like grilled corn or 15-minute garlic green beans.

Storage

Store leftover steak pieces in an airtight container in the refrigerator for 3-5 days. You can reheat them in a microwave or air fryer or enjoy them cold.

What is the best cut of steak for steak bites?

Ribeye is my favorite cut for steak bites because every bite should be nice and tender and packed with flavor. You can also use top sirloin or New York strip steak.

If you want to be super indulgent, use tenderloin or filet mignon.

Can you cook steak bites on a non-stick pan?

Yes. You can use a non-stick pan to cook steak bites. You want to get a nice sear on the steak, so set the heat to high and add a little oil to the pan.

Ultimately, a cast iron skillet or flat top griddle will deliver the best results.

Garlic Butter Steak Bites

Ingredients 

  • 16 ozs ribeye or top sirloin steak, one-inch thick
  • 1/2 tsp kosher salt
  • 1/2 tsp coarse ground black pepper
  • 2 tsp vegetable oil
  • 1/4 cup salted butter, cubed
  • 1 clove garlic, minced
  • 2 dashes Worcestershire sauce
  • 1 sprig fresh thyme
  • pinch red pepper flakes, optional

Instructions 

  • Heat Griddle: If using a griddle, heat it to medium heat. If using a large skillet, heat it to medium-high heat.
  • Season: Season the steak on both sides with kosher salt and black pepper.
  • Sear: Add a little oil to the griddle or skillet. Place the steak on the griddle. Press it down so it has full contact with the heat. Sear for 4-5 minutes per side. 
  • Cube: Remove the steak from the griddle. Rest for 5 minutes. Then, cut into one-inch cubes.
  • Toss: Return the steak to the griddle with the butter, garlic, Worcestershire sauce, fresh thyme leaves and red pepper flakes. Toss and cook to your preferred doneness.
  • Serve: Transfer to a bowl or plate. If enjoying as an appetizer, serve with toothpicks. Otherwise, divide it onto plates with your favorite sides.
