You’ll need some extra napkins for this juicy smoked jalapeno ranch chicken smothered in jalapeno ranch dressing.
Smoked Jalapeno Ranch Chicken
Ingredients
- 5 lb whole chicken
- 1 jalapeno
- .4 oz buttermilk ranch dressing & seasoning mix, packet
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 tsp olive oil
Jalapeno Ranch Dressing
- 1 jalapeno
- .4 oz buttermilk ranch dressing & seasoning mix, packet
- 1/2 cup milk
- 1/2 cup Greek yogurt
- 1/2 cup mayonnaise
Pickled Red Onions
- 1/2 cup water
- 1/2 cup white vinegar
- 1/2 cup sugar
- pinch of salt
- pinch of black pepper
- 1 red onion, sliced
Garnish
- jalapenos, sliced
Instructions
- Heat the smoker to 350-375 degrees.
- Remove the stem from the jalapeno. Chop finely or pulse in a food processor. Combine with the ranch mix, salt, pepper, paprika and olive oil.
- Rinse the chicken. Remove the giblets from the cavity. Pat it dry. Rub the jalapeno ranch mix all over the chicken.
- Place the chicken on the smoker. Close the lid and smoke for about 1 hour, or until the internal temperature reaches 165 degrees.
- Drizzle with Jalapeno Ranch Dressing. Garnish with jalapeno slices and pickled red onions.
Jalapeno Ranch Dressing
- Remove the stem from the jalapeno. Chop finely or pulse in a food processor. Combine with the ranch mix, milk, Greek yogurt and mayonnaise. Refrigerate while the chicken is smoking.
Pickled Red Onions
- Heat the water, vinegar, sugar, salt and pepper in a small pot until the sugar dissolves.
- Stir in the onions. Remove from heat and let steep while the chicken cooks.
