This Smoked Tom Collins is crafted with a smoked basil simple syrup to accentuate the gin’s vibrant botanicals while making it smooth as a lemon-lime soda.
Gin is an herbaceous liquor infused with juniper berries, lemon and other botanicals. It’s a little pungent straight up, but when you combine it with lemon juice, club soda and sugar, you create a refreshing cocktail that goes down easy.
For the sugar component, this recipe uses smoked simple syrup steeped with fresh basil leaves. You could also try other herbs, such as rosemary or mint along with lemon rind.

Ingredients
- 2 tbsp smoked basil simple syrup
- 1/4 cup gin
- 2 tbsp lemon juice
- ice
- 1/4 cup club soda
Garnish
- lemon slice
- basil leaf
Instructions
- Make a batch of smoked simple syrup and steep in a mason jar with basil leaves.
- Combine the simple syrup, gin, lemon juice and ice in cocktail shaker. Shake for 15-20 seconds.
- Fill a tall narrow glass with ice. Strain the cocktail into the glass. Top with club soda. Garnish with a lemon slice and basil leaf.
